CRAB ZUCCHINI CASSEROLE | |
7 1/2 oz. snow crabmeat 1 med. zucchini, sliced 1/4 c. chopped onion 1 clove garlic, crushed 1/4 c. oil or butter 1/2 tsp. basil 1/4 tsp. salt 1/8 tsp. pepper 3/4 c. shredded Swiss cheese 1/2 c. soft bread crumbs 2 med. tomatoes or 1 1/2 c. canned Cook zucchini, onion, and garlic in oil about 5 minutes until tender. Add seasonings, crabmeat, Swiss cheese and bread crumbs. Chop tomatoes, removing seeds. Add to first mixture and toss lightly. Place in buttered 1-quart casserole and bake at 375 degrees for 30-35 minutes or until heated through. Makes 2 servings. Per serving: 444 calories, 29 grams protein, 10 grams carbohydrates, 26 grams fat. |
