CHICKEN CUTLETS 
1 chicken breast, boned & sliced thin
3/4 c. dry bread crumbs
1/4 c. Parmesan cheese
1 clove garlic, minced, or garlic powder
1/2 tsp. each basil, parsley & oregano
Salt & pepper
1 egg, beaten
Flour to dredge
Oil to fry

Combine dry ingredients. Dip cutlets in flour then in egg and finally in bread crumb mix. Coat well. Fry in hot oil until golden brown on both sides. Serve hot with lemon slices.

NOTE: Once again these can be varied by serving with a marinara sauce and Mozzarella cheese and baked for a short time. Or with a marinara sauce to which herbs, celery, pimento and olives, chopped have been added. Pour over cutlets and bake for a short time.
