PERFECT CORN BREAD | |
1 c. all-purpose flour 1/4 c. sugar 3/4 tsp. salt 1 c. milk 1 c. yellow corn meal 4 tsp. baking powder 2 eggs 1/4 c. shortening In a bowl stir together: flour, corn meal, sugar, baking powder and salt. Add milk, eggs and shortening. Beat with rotary or electric mixer until just smooth, about 1 minute. Do not over beat. Pour in greased 9x9x2 pan. Bake at 425 degrees for 20-25 minutes. |
