BROCCOLI CASSEROLE 
2 pkgs. chopped frozen broccoli
1 tube Ritz crackers (crushed)
1 1/2 sticks butter
8 oz. Velveeta cheese

Cut cheese in cubes. Cook and drain broccoli, add cubed cheese, cover and set aside. Cut butter in pieces and add to broccoli; stir.

In frying pan add 1/2 stick butter. Heat and add crushed cracker crumbs and saute until golden brown.

Put broccoli and cheese mixture into 2 quart casserole. Add cracker crumbs. Cover and bake 350, 35 minutes. Remove lid last couple minutes to brown.

For larger casserole use 3 packages broccoli and a little more cheese.

If you like spinach use 2 packages broccoli and 1 package spinach.
