FRYING PAN COOKIES 
2 tbsp. butter
2/3 c. sugar
2 eggs, well beaten
Pinch of salt
1 1/2 c. chopped dates
2 1/2 c. Rice Krispies
1/2 c. nuts (optional)
1 tsp. vanilla

Melt butter in a heavy frying pan. Add sugar, eggs and salt. Stir in chopped dates. Cook over low heat, stirring constantly for about 7 minutes or until thick. Remove from heat.

Stir in Rice Krispies, nuts and vanilla. Cool slightly, form into small balls and roll in finely shredded coconut.
