BLACKEYED PEAS CREOLE 
1 c. blackeyed peas
1 sm. dried red pepper
1/4 c. each of chopped red pepper, green pepper and scallion
1 clove minced garlic
1 tsp. paprika
1/4 tsp. cumin
Cayenne to taste

Add water to cover peas by one inch and boil for 2 minutes; let stand one hour. Add dried red pepper, add water if needed. Boil covered 40 minutes and take out pepper.

Add chopped red pepper, green pepper, scallions, garlic and cumin and paprika. Cook 10 more minutes, add water if needed. This dish is served on New Year's to bless the year.
