SOUTHERN JAM CAKE 
1 c. butter, softened
5 eggs
1 c. strawberry preserves
3 c. flour
2 tsp. cinnamon
1 c. buttermilk
Chopped pecans (optional)
1 c. sugar
16 oz. blackberry jam
3 tsp. ground allspice
1/2 tsp. ground cloves

In mixing bowl beat butter and sugar until fluffy. Add eggs one at a time. Stir in jam and preserves. Stir in together dry ingredients alternately with milk to jam mixture. Pour in 3 cake pans. Bake 40 minutes. Cool; top with maple frosting.

MAPLE FROSTING:

8 oz. cream cheese
1 1/2 lb. (6 c.) powdered sugar
2 tsp. maple flavoring
1 tbsp. milk

Beat cream cheese until fluffy. Add powdered sugar, maple flavoring, and milk; mix well. May add 1 teaspoon milk at a time for desired consistency.
