POTATO CAKES 
3 tbsp. chopped onion
3 tbsp. butter
5 c. hot diced potatoes, cooked
1 tsp. salt
2 tbsp. milk
2 eggs, beaten
2 tbsp. chopped parsley
1/2 tsp. celery seed
Dry bread crumbs
Corn oil

Saute onion in butter. Add to potatoes and mash together. Blend in salt and milk. Chill. Mix in eggs, parsley, and celery seed. Shape into patties. Coat with bread crumbs. Fry in hot oil until brown on both sides.
