CHEESE RICE BALLS | |
2 c. rice, cooked 2 eggs, beaten 1 c. bread crumbs 1/4 lb. Mozzarella cheese, cubed 1/2 c. Parmesan cheese, grated Flour Oil for frying Shape rice into cylinders or balls. Place a cube of Mozzarella in center of each. Dip each ball in flour, then egg, then bread crumbs. Fry in hot oil until browned. Serve hot. Makes 4 servings. |
