1/2 c. chopped green onion 1/2 c. chopped white or red onion 1 lg. green pepper, cut in strips 1/2 c. chopped celery (with a few leaves) 1 tsp. minced garlic 1/3 c. butter 1/2 to 1 lb. raw shrimp (prawn), peeled & cleaned 2 doz. raw oysters (1 c.) or 1 c. crab or 1 c. cubed ham 1 lb. can tomatoes 1/2 tsp. salt 1/4 tsp. cayenne (opt.) 1 c. raw rice 1 c. chicken broth In a large pan saute onion, green pepper, celery and garlic in the butter until tender, but not brown. Add shrimp and oysters or crab. Add ham when rice is added. Add the tomatoes, chicken broth, salt, cayenne and rice and cover. Cook 25 to 30 minutes over low heat until rice is done. If mixture becomes too dry, add tomato juice. Taste for seasoning. |
