HOMEMADE BOLOGNESE SAUCE 
2 oz. butter
Chopped meat: 1/2 lb. beef, 1/4 lb. veal, 1/4 lb. pork
1 lg. onion, sliced
1 sliced carrot
1 sliced celery
4 tsp. tomato sauce
1 c. red wine or milk
1 1/2 c. meat broth
1/2 tsp. salt
1/2 tsp. pepper

First, put the butter in the casserole, the sliced onion, carrot and celery. Fry gently over a low heat until the onion is golden. Then, add the chopped meat with salt and pepper. Sprinkle with red wine or milk, add some tomato sauce. If you like you can also add some mushrooms. Cook slowly, stirring occasionally, for about 20 minutes or until the liquid is absorbed.
