HONEY WHEAT BREAD | |
2 env. active dry yeast 4 c. very warm water 3 tbsp. honey 1 tbsp. vegetable oil 2 tsp. salt 5 c. unbleached all-purpose flour 5 c. whole wheat flour Sprinkle yeast over very warm water in a large bowl. Stir to dissolve. Stir honey and oil in. Let stand 10 minutes until bubbly. Stir in salt and both flours. Turn and knead on lightly floured surface for 10 minutes. Place in large greased bowl turning to bring greased side up. Warm oven to 200 degrees then turn off for 5 minutes. After 5 minutes place bread which is in the greased bowl in off oven for 1 hour. Then punch down and divide into 3 parts. Pat out each part to make a 12 x 8 inch rectangle. Roll up from short end, place in greased 8 x 4 x 3 inch pans. Let loaves rise in warm place about 10 minutes. Bake at 400 degrees for 15 minutes, then at 350 degrees for 30 minutes. Remove from pans to wire rack to cool completely. Makes 3 loaves. |
