APRICOT CHICKEN 
Chicken breasts
Flour
2 tbsp. butter
2 tbsp. oil
1/2 c. apricot jam
1 tsp. marjoram
1 tsp. lemon rind
2 tsp. sherry
1 tsp. soy sauce
Dash ginger
1 1/2 c. apricot juice (16 oz. can)
1 lg. green pepper, cubed

Brown chicken with first four ingredients in fry pan. Coat with jam. Combine next 5 ingredients and pour over chicken. Simmer 40 minutes, basting occasionally. Add green pepper, cook 5 minutes more. Just before serving, add reserved apricots. Serve with rice.
