VY'S GROUND MEAT CASSEROLE 
2 lbs. ground meat
2 cans mixed vegetables (Del Monte), not drained
1 lg. onion, chopped
1 1/2 qt. mashed potatoes (fresh or flakes), cooked
12 oz. pack American cheese
1/2 stick butter

Brown meat and onion; drain. Add vegetables, cover with water and simmer for 30 minutes. Mash potatoes with butter until fluffy. Take large casserole bowl, pour 1/2 of your meat and vegetables into the bottom. Cover with 1/2 of your mashed potatoes. Put a layer of cheese, repeat with the remainder of meat, vegetables, potatoes and cheese. Bake at 400 degrees until casserole is bubbling through cheese.
