6 boneless chicken breast
1 c. instant mashed potatoes dry
1/4 c. flour
1/2 tbsp. salt
1/2 tsp. pepper
2 eggs

Mix all dry ingredients together in separate bowl. Beat eggs in different bowl. Dip chicken in eggs then roll in dry mixture. Fry in hot oil until golden brown.
