LENTEN LASAGNA | |
1 (10 oz.) pkg. lasagna or wide noodles 1/2 c. chopped onion 1/4 c. cooking oil 1 c. tomato puree 1/2 c. water 1/2 tsp. thyme 1/2 tsp. salt 1/4 tsp. pepper 2 c. shrimp or lobster meat 1 lb. Mozzarella cheese 1/2 c. grated Parmesan Cook noodles in rapidly boiling water (salted) until tender and drain. Saute onion in oil until tender. Stir in tomato puree, water and seasonings, simmer about 1 hour. Then place on bottom of a large shallow baking dish, one layer of noodles, top with a layer of either shrimp or lobster meat. Cover it with sauce. Place layers of Mozzarella cheese and a sprinkling of Parmesan. Repeat layers to fill dish. Bake in moderate oven, 350 degrees, until bubbling hot, about 30 to 35 minutes. |
