KATHLEEN'S FRESH VEGETABLE
SOUFFLE
 
1/3 c. flour
1/3 tsp. salt
Dash of pepper
3/4 c. real mayonnaise
1/3 c. milk
10 oz. pkg. chopped mixed vegetables
6 egg whites

GENTLY stir flour, salt and pepper into real mayonnaise. Do not overmix. Stir in milk slowly, then stir in vegetables. Beat egg whites until stiff. Gently fold into mayonnaise mixture until thoroughly blended. Pour into greased souffle dish. Bake in 325 degree oven for 40 minutes, until inserted knife comes out clean.
