CARROT COOKIES 
1/2 c. shortening
1 c. packed brown sugar
2 eggs
1 c. grated carrots
2 c. flour
1 tsp. baking powder
1/2 tsp. cinnamon
1 tsp. vanilla
1 1/2 c. raisins
1/2 c. chopped nuts
1/3 c. milk
2/3 c. undiluted orange juice

Beat shortening, sugar, and eggs in large bowl. Stir in carrots; set aside. Mix flour, baking powder, soda, and cinnamon. Stir in raisins and nuts. Add to first mixture. Add milk to carrot mix. Stir in orange juice and vanilla. Drop by spoonfuls on cookie sheet. Bake 10 to 12 minutes at 350 degrees. Soft cookie, like a cake.
