ORIENTAL CHICKEN SALAD 
Servings: About 6. Preparation time: About 5 minutes. Chilling time: About 1 hour.

3/4 c. cranberry orange sauce
1 tbsp. soy sauce
1/2 tsp. ground ginger
3/4 tsp. red vinegar
2 c. cooked diced chicken
1/2 c. blanched, halved snow peas
1 c. thinly sliced Chinese cabbage
1/4 c. very thinly sliced carrots
1/4 c. very thinly sliced red pepper
2 tbsp. sliced green onions

In a small bowl, combine cranberry orange sauce, soy sauce, ginger and vinegar. Cover and chill about 1 hour. In a large bowl, combine remaining ingredients; toss gently to mix. Serve with cranberry-soy dressing.
