GERMAN POTATO SALAD 
8 med. potatoes, cooked & cooled
8 slices bacon, fried & crumbled (crisp)
4 fresh green onions
1/2 c. chopped white onion
3 hard-boiled eggs
1 clove fresh garlic, chopped
1/2 tsp. beef bouillon
1 tbsp. vinegar
3 tbsp. water
2/3 + 1/4 c. mayonnaise (may add more if desired)

Peel cooled potatoes, slice potatoes like for frying. Place in large bowl, peel and chop eggs into potatoes. Fry bacon, reserve half of bacon grease, saute onions and garlic in grease. Add vinegar and bouillon and water to onions and garlic, bring to boil. Remove, pour down oven potatoes. Add mayonnaise and toss. Add crumbled bacon, toss and serve. Garnish with fresh parsley. Serve warm.
