GERMAN POTATO SALAD 
1 lg. onion, chopped
10 slices bacon, fried & crumbled
1 c. Hellmann's mayonnaise
2/3 c. cider vinegar
2 tbsp. sugar
Salt & pepper
8 med. potatoes, peeled, cooked & sliced, approximately 8 c.
2 tbsp. parsley

Saute onion in 2 tablespoons bacon grease. Add mayonnaise, vinegar, sugar, salt and pepper. Then add cooked potatoes. Stir until well coated. Cover and simmer 15 minutes or so. Add parsley and crumbled bacon. Fills 2 quart casserole.
