GINGERS DRUMSTICKS FROM THE
PHILIPPINES
 
2 1/2 lbs. small drumsticks or drummies
8 oz. can pineapple chunks and juice
1/2 onion, sliced thin
1 tsp. salt
Sprinkle of pepper
2 tbsp. vinegar or lemon juice
1/4 c. brown sugar
2 tbsp. cornstarch
1/8 c. raisins
1 green pepper, cut in chunks
1 tbsp. soy sauce
Optional: sliced tomatoes, sliced par boiled carrots

Broil or fry chicken until brown. Mix all ingredients and pour over chicken. Cover and bake at 325 degrees for 1 1/2 hours.

Double recipe for 2 fryers. Can also be put in crockpot instead of oven. Serves 4 to 6.
