FUDGE FILLED CUPCAKES 
4 oz. chocolate chips
6 oz. butter
1 1/4 tsp. vanilla
4 lg. eggs
1 1/2 c. sugar
1 c. flour
1 tsp. baking soda

Line 30 cupcake tins with paper cups. In a double boiler set over medium heat, melt the 4 ounces of chocolate chips, butter and vanilla, stir until smooth. Remove from heat. Beat eggs until frothy, gradually beat in sugar, then beat in the flour and soda, pour in the melted chocolate and beat. Fill cupcake liners 1/2 full.

FILLING:

8 oz. pkg. cream cheese
1/4 c. sugar
1 lg. egg
3 oz. chocolate chips

Beat together the cream cheese, sugar and egg until blended; add 3 ounces chocolate chips. Drop a heaping teaspoonful into each cupcake. Cover with more chocolate batter. Bake at 350 degrees for 20 to 30 minutes.
