CHICKEN BREASTS WITH LEMON
RAISIN SAUCE
 
3 tbsp. butter
1/2 c. white raisins
1/3 c. lemon juice
1/3 c. honey
1 tbsp. grated lemon peel
2 lg. chicken breasts, split and skinned
1/2 c. water
1 tbsp. cornstarch

Place chicken breasts in a greased pan. Melt butter, add raisins, lemon juice, honey and lemon peel. Pour over chicken breasts and bake at 375 degrees 20 to 25 minutes or longer. Remove chicken from pan.

Combine water and cornstarch in small saucepan; add sauce from baking pan to cornstarch mixture. Cook over low heat, stirring occasionally until it thickens. Pour over chicken breasts and serve.
