IMPOSSIBLE TACO PIE
1 lb. ground beef
1/2 c. chopped onion
1 env. (1 1/4 oz.) taco seasoning mix
1 (4 oz.) can chopped green chilies, drained
2 c. milk
1 (5.5 oz.) packet Bisquick baking mix (1 1/3 c.)
4 eggs
2 tomatoes, sliced
1 c. shredded Monterey Jack or cheddar cheese (about 4 oz.)

Heat oven to 400 degrees. Lightly grease pie plate (10 x 1 1/2 inches). Cook and stir ground beef and onion in 10-inch skillet until beef is brown; drain. Stir in taco seasoning mix. Spread in plate; sprinkle with chilies.

Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake 35 minutes. Top with tomatoes; sprinkle with cheese.

Bake until cheese is golden brown and knife inserted in center comes out clean, 8-10 minutes longer. Cool 5 minutes. Serve with dairy sour cream, chopped tomatoes and shredded lettuce if desired. Yield: 6-8 servings.
