LENTILS WITH VEGETABLES 
1 c. lentils
1 sm. onion, chopped
2 sm. carrots, thinly sliced
1 chopped stalk celery (optional)
2 tbsp. olive oil
1 1/2 tsp. salt
1 tbsp. ground parsley
1 garlic clove, chopped
Grated Cheddar cheese
1/2 c. ketchup

Wash lentils and put in large pan with 3-4 cups water. Bring to a boil, reduce heat and simmer until tender, about 30 minutes. Saute onion and garlic in oil until clear in color. Add vegetables and ketchup. Then add onion, garlic, oil mixture. Simmer until vegetables are tender, about 10-20 minutes, adding boiling water as necessary.

Just before serving, add the salt and cheese. Makes about 4 cups.
