VELVET LUNCH CAKE | |
1 c. white sugar 1 c. brown sugar 1 c. shortening 3 eggs 1 tbsp. molasses or syrup 2 c. buttermilk or sour milk 4 c. flour 1 tsp. cinnamon 1 tsp. cloves 2 tsp. baking soda 1/4 tsp. salt 2 tsp. vanilla 1 c. raisins or 1 c. coconut Sift dry ingredients together. In mixer, blend sugars and shortening. Add eggs, vanilla and molasses. Add the dry ingredients alternately with buttermilk. Add raisins or coconut last. Pour in 10 x 15 (jelly roll) greased and floured pan. Sprinkle sugar and cinnamon over batter in cake pan. This cake needs no frosting! Bake at 350 degrees for 35 to 40 minutes. |
