BANANA BREAD 
1 3/4 c. flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 eggs
3 to 4 bananas
1 c. (4 oz.) nuts, coarsely chopped

Sift together flour, baking powder and salt. Beat shortening in mixer bowl until creamy consistency. Add sugar and eggs. Continue beating at medium speed 1 minute. Peel bananas. Add to egg mixture. Mix until blended. Add flour mixture, beating at low speed about 30 seconds, or only until blended. Do not overbeat. Scrape bowl and beater once or twice. Turn into greased loaf pans and bake in moderate oven (350 degrees) about 1 hour and 10 minutes or until bread is done.
