FRITTER BATTER 
1 1/3 c. sifted enriched flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2/3 c. milk
1 well beaten egg

Sift together flour, baking powder, and salt. Blend milk and egg; add gradually to dry ingredients. Stir in desired fruit, vegetable or meat. Drop from tablespoon into deep, hot fat (365 to 375 degrees). Fry 2 to 5 minutes. Drain on paper towels.

APPLE FRITTERS: Reduce flour to 1 cup and milk to 1/2 cup. To dry ingredients, add 1 tablespoon sugar; to liquids add 1 tablespoon salad oil. Pare and core 2 tart apples; cut in matchsticks (2 cups); add to batter. Fry fritters. Sift confectioners' sugar over them.

BANANA FRITTERS: Peel 4 bananas, cut in halves lengthwise and then crosswise. Roll in confectioners' sugar, then dip in batter (make 1/2 Fritter Batter, increasing the milk to 1/2 cup). Fry fritters; drain on paper towels. Sift confectioners' sugar over. Makes 4 to 6 servings.

CORN FRITTERS: Increase salt to 3/4 teaspoon; add pepper if desired. Use 1 1/2 cups drained, whole kernel corn. Serve fritters with maple syrup. Makes 4 to 6 servings.
