CANDIED SWEET POTATOES 
5 lbs. sweet potatoes
6 tsp. brown sugar
1 bag sm. marshmallows
1/4 lb. butter

Cut potatoes to 2 inch chunks. Bring to boil in pot of water (skins on); turn down to medium heat and continue to cook until you can pierce with a fork. Remove from heat and drain; let cool. Remove skins.

Lightly butter a 2-quart casserole. Slice potatoes to 1/2 inch and line bottom of casserole. Sprinkle with brown sugar and dot with butter. Repeat layers until casserole is full. Cover top with marshmallows. Bake at 350 degrees for 25 minutes.
