JAM CAKE 
3 eggs
2/3 c. lard
2 c. sugar
2/3 c. coffee
4 c. flour
1 c. raisins, chopped
1/2 c. buttermilk
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
2 tbsp. cocoa
1 c. jam (blackberry jam)
1 c. nuts, chopped
Dash of salt
1 tsp. vanilla
1 tbsp. baking soda

Can use Crisco or butter.

Cream lard and gradually add sugar, cream together until light and fluffy. Add well beaten eggs. Put dry ingredients together. Dissolve soda in buttermilk. Alternate flour and liquids to sugar/butter/egg mixture. Add nuts and raisins to flour and add. Add jam. Grease and add wax paper to cake pans. This is a very large cake. Will take at least 3 pans. Bake at 350 degrees for 45 to 50 minutes. Use chocolate icing and spread jam in between each layer.
