SPINACH MEAT ROLL 
10 oz. pkg. frozen leaf spinach
2 lbs. ground beef
2 eggs
1/4 c. ketchup
1/4 c. milk
3/4 c. soft bread crumbs
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
3 oz. pkg. smoked sliced ham
3 slices Mozzarella cheese

Thaw spinach quickly by rising with hot water to separate. Drain. Mix beef, eggs, ketchup, milk, crumbs, salt, pepper and oregano.

On a 18 x 15 inch piece of foil, pat meat mixture into rectangle about 12 x 10 inches.

Arrange spinach evenly on meat mixture, leaving 1/2 inch butter at edges. Sprinkle 1 teaspoon salt on spinach; arrange ham on top. Carefully roll up meat, beginning at narrow end and using foil to lift meat.

Place on rack in ungreased pan 9 x 13 inches. Bake meat roll at 350 degrees for 1 hour and 15 minutes. Top with diagonally cut cheese slices and return to oven to melt cheese (5 minutes).
