LOADED POTATO SOUP | |
8 potatoes, peeled and cubed 1/2 c. butter 1/2 c. all-purpose flour 8 c. milk 1/2 lb. sour cream 1/2 c. shredded Cheddar cheese 1/4 c. chopped onion salt to taste ground black pepper to taste Microwave potatoes for 7 to 10 minutes. While microwaving potatoes, melt butter. Add flour and milk. Heat at medium heat; add sour cream, 1/2 cup Cheddar cheese, onions, salt and pepper to taste. Add potatoes; cook on medium heat for about 5 more minutes. Top with bacon bits and additional grated Cheddar cheese before serving. |
