PICKLED EGGS 
2 c. white vinegar
1 tbsp. sugar
2 cloves garlic, halved
1 tsp. salt
1 bay leaf
8 corn peppers
1 med. onion, sliced and separated into rings
12 hard boiled eggs, cooled and shelled

Make 2 days ahead. In medium saucepan, combine all ingredients except eggs. Heat, over medium heat just to boiling. Simmer 5 minutes. Place eggs in canning jars. Pour pickling mix over eggs. Cover. Cool. Refrigerate at least 2 days. Makes 1 dozen.
