BARRY'S REAL ROASTED CHICKEN
any size whole chicken
melted butter, for rubbing (or satisfying substitute)
salt, to taste (ground sea salt is great!)
ground black pepper, to taste.
garlic powder, to taste.
paprika, to taste
1 medium onion, cut in half
1 (15 oz.) can chicken broth/stock

Wash and pat the chicken dry. Rub the chicken, inside and out, with melted butter. Stand chicken on end and season inside with salt, pepper and garlic. Lay chicken down and season thigh side first with salt, pepper, garlic and paprika. Turn Chicken over with breast side up, and season with salt pepper, garlic and paprika. Do your best to season all surfaces.

Place chicken in roasting pan. Insert onion halves into chicken body. Pour chicken broth into pan around chicken. Roast chicken per the packagers instructions (usually 350°F until internal temperature reaches 160°F), basting 2 to 3 times. Roast until medium well done. Will continue to cook as it cools down out of oven.
