DATE PINWHEELS 
1 c. butter
1 c. granulated sugar
1 c. brown sugar, firmly packed
1/2 tsp. vanilla
3 eggs
4 c. sifted flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

DATE FILLING:

2 1/4 c. cut up dates
3/4 c. sugar
3/4 c. water
1 c. nuts, chopped fine

Cream butter, sugars and vanilla until fluffy. Beat in eggs, one at a time. Sift dry ingredients; stir in, blending well. Chill dough then divide into 4 parts. Roll out on floured board to 1/4 inch thickness. Spread with date filling; roll up jelly roll fashion. Wrap in waxed paper, refrigerate overnight. Cut in 1/4 inch slices; place on ungreased cookie sheet. Bake at 375 degrees about 10 minutes. Makes 8 dozen cookies.

Filling: In saucepan, combine dates, sugar and water; cook, stirring until thick paste forms. Remove from heat and stir in nuts. Cool.
