LEMON-HERB BROILED CHICKEN | |
1/4 c. sliced green onion 2 tbsp. water 2 tbsp. lemon juice 2 tbsp. cooking oil 1 clove garlic, minced 1/2 tsp. dried oregano, crushed 1/2 tsp. dried basil, crushed 1/4 tsp. dried thyme, crushed 1/8 tsp. salt 4 boneless, skinless chicken breasts Pound chicken flat; place in a plastic bag or glass bowl to marinade. For marinade, combine all other ingredients. Pour over chicken. Marinate 30 minutes at room temperature. Drain reserving marinade. Place chicken on broiler rack. Broil 3 to 4 inches from heat for 2 to 3 minutes, brushing often with marinade. Turn chicken and broil 2 to 3 minutes more or until done, brushing often with marinade. Serves 4. |
