WHOLE WHEAT AND HONEY MUFFINS | |
1/2 c. honey 2/3 c. melted butter 1 1/2 c. milk 2 eggs, well beaten 2 tsp. almond, maple or orange extract 5 tsp. baking powder 3 1/2 c. fine whole wheat flour 1/2 to 1 c. chopped nuts 1 c. fresh peeled apples, cubed 1/2 c. raisins Place honey, butter, milk, eggs and extract in a large bowl. Mix until smooth. Stir in baking powder and flour, gradually adding to honey and milk, etc. Fold in nuts and fruit. Fill greased muffin tins a little over half full with batter. Bake at 375 degrees about 12 minutes or until wooden pick comes out clean. |
