TACO CASSEROLE 
1 lg. shredded Mozzarella
1 sm. cheddar cheese
1 1/2 lb. ground beef
1 lg. onion
1 bell pepper
1 pkg. taco seasoning
1 sm. tomato paste
1 (16 oz.) can tomato sauce
8 oz. Ricotta cheese
8 oz. sm. curd cottage cheese
8 oz. sour cream
1/2 tsp. garlic, crushed or 2 cloves
1 tsp. cayenne pepper, or to taste
12 oz. wide egg noodles

Brown ground beef, drain fat. Add onion, garlic, bell pepper, taco seasoning, tomato paste, tomato sauce, and 1 cup of water. Simmer until onions and bell pepper are tender. Cook noodles and drain. Mix Ricotta, cottage cheese, and sour cream with noodles. Pour noodles in large casserole dish, then pour meat mixture on top.

Sprinkle shredded Mozzarella and cheddar cheese on top. Bake at 400 degrees for 30 minutes or until cheese is light brown.
