COUNTRY-STYLE APPLE CAKE | |
3 c. grated apples 1 tsp. baking soda 1 tsp. cinnamon 2 eggs 1 c. chopped nuts 2 tsp. vanilla 3 c. sifted flour 1/2 tsp. salt 2 c. sugar 1 1/2 c. salad oil 1 c. raisins (optional) Peel and shred apples. Batter is made by adding beaten eggs and salad oil to sifted dry ingredients. Next add vanilla, nuts and raisins to apples. Fold these into other mixture. Mixture is poured into a 9 x 13-inch pan that is greased and lightly floured. Bake at 325°F for 1 hour. Cake is left in pan and frosted. Frosting: 1 1/4 c. butter 1 tsp. vanilla 2 tbsp. warm milk 2 c. sifted powdered sugar Mix and spread. |
