Break 2 egg yolks into medium bowl. Reserve whites for another use. Stirring yolks with chopsticks or fork, gradually add 1 cup cold water. Using both a chopping and stirring motion, add 1 cup flour, no salt. Do not over bake, batter should be lumpy. Dip shrimp, chunks of fish or vegetables in batter and deep fry quickly in hot peanut oil at 375 degrees. Drain on paper towels and add salt to taste. Can be served with soy sauce and lemon juice. |
