TEXAS EGGS 
10 eggs
3/4 c. milk
1/4 c. mayonnaise
1 bell pepper, chopped
2 c. grated sharp Cheddar cheese
2 cans condensed mushroom soup
Salt and pepper to taste
Dash of hot Tabasco sauce (optional)

Mix eggs, milk, mayonnaise, salt and pepper and hot sauce together in blender. Also blend 1/2 cup grated cheese. Add chopped bell pepper to egg mixture and pour into 7x13 inch dish. Bake at 350 degrees for 30 minutes. This could be done the night before.

Pour soup (spread like icing) over cooked eggs and top with 1 1/2 cups cheese. Bake for additional 15 minutes, or until heated through if prepared the night before. Serves 6.
