CAULIFLOWER CASSEROLE 
1 med. head of cauliflower or 1 (20 oz.) bag
4 hard boiled eggs
5 oz. of peas
3 oz. American cheese (grated)

Steam cauliflower until tender. Cook peas until tender. Combine cauliflower, peas and hard boiled eggs. Make a 2 cup white sauce, then add grated cheese to sauce. Pour over vegetables and eggs and stir carefully. Sprinkle with unbuttered bread crumbs.

Bake at 350 degrees for 25 minutes.

WHITE SAUCE:

1/4 c. butter
1/4 c. unsifted flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk

Melt butter, stir in flour on medium heat. Add salt, pepper and milk. Cook until desired consistency.
