HAM SOUFFLES 
1 1/2 c. ground ham
1/2 lb. grated sharp cheese
1 sm. green pepper, ground
1 sm. onion, ground
1 1/4 c. milk
2 beaten egg yolks
1/2 c. cracker crumbs
2 stiffly beaten egg whites

Combine first 4 ingredients. Stir in milk, egg yolks, and crumbs. Fold in egg whites. Fill six greased 6 ounce custard cups. Bake in moderate oven 40-50 minutes. Top with mushroom sauce when serving. Good for leftover ham.
