POTATO PANCAKES 
2 med. potatoes, peeled
1 tbsp. lemon juice
1/4 c. melted butter
2 tbsp. all purpose flour
1/4 c. chopped onions
1/2 tsp. salt
1 tbsp. sliced scallions
1 lg. egg, beaten
1/4 tsp. black pepper
1/4 tsp. baking powder

Grate potatoes on coarse side of grater. Toss in lemon juice to coat. Let stand 5 minutes. Drain well. Add rest of ingredients. In 8 inch pan on medium high heat place a heaping tablespoon of potato mixture in heated oil. Cook until golden brown, 3-4 minutes. Keep warm in 300 degree oven. Makes 16 pancakes.
