ZESTY SHREDDED ZUCCHINI 
1 lb. fresh zucchini
1 clove garlic, minced
1 tbsp. butter
Dash red pepper sauce
Salt & pepper

Trim the ends of zucchini; shred it coarsely, using hand grater. In nonstick skillet prepared with oil, combine zucchini, garlic, hot sauce and butter. Cover tightly and cook over medium heat for 1 minute. Uncover the skillet and cook 1 more minute. Season to taste.
