VERY HEALTHY PANCAKES 
2 eggs
2 cups oat bran flour mixture
2 3/4 cups skim milk
1/4 cup canola oil
2 tbsp. melted butter
3 tbsp. sugar
1 1/2 tbsp. baking powder
1 tsp. salt
1 cup all-bran cereal

Beat eggs with hand beater until fluffy then beat all remaining ingredients just until smooth. Grease a heated hand griddle. Pour about 3 tablespoons of batter from the tip of a large spoon onto the hot griddle. cook pancakes until the ends start to dry and puff up and also, tiny bubbles will begin to form. Turn and cook until golden brown.

Makes 18, 4-inch in diameter pancakes.
