Vegetable cooking spray 1 c. whole wheat flour 3/4 c. quick-cooking oats 1/4 c. crushed bran flakes 1/2 tsp. baking soda 1/8 tsp. salt 5 packets sugar substitute or replacement (.028 oz. or.035 oz.) 1/4 c. unsweetened apple juice concentrate, thawed 1/4 c. vegetable oil 2 tbsp. water 1 lg. egg, well beaten 1 tsp. vanilla extract 1/2 c. chopped walnuts 1/2 c. raisins Not aspartame. 4 packages Sweet One; 1 package Sweet & Low. Preheat oven to 350 degrees. Lightly coat 2 baking sheets with vegetable cooking spray. Set aside. In large bowl, combine flour, oats, bran flakes, baking soda, salt, and sugar substitute. In small bowl, put apple juice concentrate, oil, water, egg, vanilla, walnuts, and raisins. Blend well. Add mixture to dry ingredients and mix until well combined. Cover dough with plastic wrap and chill 1 hour. Measure level tablespoon size portions of dough. Place them, well spaced, on prepared baking sheets and flatten to 1/2 inch thickness. Bake 8-10 minutes until lightly browned. |
