BAKED POTATO CASSEROLE | |
8 med. baking potatoes 8 oz. pkg. sour cream 1 can cream of mushroom soup 1 lg. onion, chopped 2 c. Cheddar cheese, shredded Scrub potatoes well. Do not peel. Boil for 20 minutes. Combine sour cream and soup. Slice potatoes, arrange half in a 3 quart casserole dish that has been sprayed with a non-stick cooking spray. Place half of the onions on top of potatoes and pour half of soup mixture over. Sprinkle with half of the cheese. Repeat layers with remaining ingredients. In a preheated 350 degree oven bake for 45 minutes to 1 hour or until bubbly. Makes 6 to 8 servings. Preparation time: 30 minutes. |
