BAKED OATMEAL 
3/4 c. sugar
1/2 c. butter
1 1/2 c. milk
2 1/2 tsp. baking powder
2 eggs
1 tsp. salt
2 1/2 c. quick oatmeal

Cream sugar and butter. Add eggs. Beat. Stir in salt, baking powder and oatmeal. Add milk. Pour into greased casserole (2 quart) dish. Sprinkle with brown sugar and cinnamon. Bake, uncovered, at 300 degrees for 45 minutes.

Nuts, raisins or other dried fruit taste great in this dish. Even delicious the next morning reheated!

By far the best baked oatmeal I've ever made! It is my most requested recipe! I always double it and bake it in a 9x11-inch pan. It does take a bit longer to bake! When cool, I cut into generous pieces and freeze. They make great gifts for shut-ins or for those days when you have unexpected company. I like to serve it with blueberries, strawberries, nuts and steamed milk. Thanks for this amazing recipe :)
